Henri Joyeux est professeur honoraire de cancérologie et chirurgie digestive de la faculté de médecine de Montpellier, prix international de cancérologie en 1986, spécialiste des relations entre nutrition et maladies de civilisation.
Jean Joyeux est nutritionniste, spécialisé en nutrition sportive, conseiller de nombreux athlètes jusqu’au niveau international, enseignant à l’ENH et à l’ECN de Genève, ainsi qu’au DU Alimentation santé et micronutrition de l’université de Bourgogne.
En préambule de ce livre, ils nous rappellent que les maladies chroniques dégénératives tuent chaque année 24 millions d’individus dans le monde. Le cancer emporte tous les ans plus de 6 millions de personnes et, selon le World Cancer Research Fund, 3 à 4 millions de cas de ces cancers pourraient être évités par un changement des habitudes alimentaires.
De même, dans les cas de diabètes et de maladies cardio-vasculaires, on sait à quel point les facteurs de risque sont intimement liés au modèle alimentaire et à l’hygiène de vie.
Mais dans l’esprit de beaucoup, une alimentation saine, bonne pour la santé, ne pourrait aucunement satisfaire palais ou papilles. Ce livre veut nous prouver le contraire. Et nos deux professionnels de la santé font pour cela appel à des études, des formations, une importante bibliographie et une impénitente gourmandise associée à une passion pour la santé. Au fil des pages, ils démontrent qu’une alimentation saine peut être hautement gastronomique !
