Le quotidien belge Le Soir publie un long entretien avec Dorothée Goffin, ingénieur chimiste, docteur en sciences agronomiques et ingénierie biologique, cofondatrice du Smart Gastronomy Lab. Il y est largement question de l’alimentation du futur, du moins telle que certains voudraient nous l’imposer.

Le développement de produits par la science peut aussi faire peur, comme le développement de la viande in vitro par exemple.
Pour l’instant, la viande développée en laboratoire est encore à l’état de prototype. Mais de gros acteurs essaient de la développer à grande échelle et de la rendre accessible. Le premier steak in vitro mis au point est pour le moment impayable. L’idée, c’est de pouvoir en faire des productions rentables. Donc ça existe, oui, mais c’est une solution parmi d’autres.

On parle aussi de plus en plus de réalité augmentée dans les restaurants…
C’est quelque chose qui est très tendance, en effet. Vous avez par exemple des restaurants où il y a des dispositifs qui amplifient le bruit de ce que vous mâchez pour avoir un impact sur votre satiété ou des lunettes à réalité augmentée qui vous font croire que votre assiette est plus remplie que ce qu’elle n’est.
La réalité augmentée peut se mettre au service d’une expérience culinaire, comme le Sublimoton à Ibiza, le restaurant le plus cher du monde, où les murs et la table sont des écrans tactiles interactifs. Vous êtes mis dans une ambiance en fonction de ce que vous mangez.
C’est sans doute la gastronomie selon Attali…
