Tout fiche le camp ma bonne dame, y compris la suprématie de la France dans le domaine des restaurants de luxe. Selon la mise à jour du mois de novembre 2017, la France n’arrive qu’en seconde position derrière le Japon, mais rattrape son retard.
En effet, le Japon compte 28 restaurants à 3 étoiles (dont 12 à Tokyo, 7 à Kyoto et 3 à Osaka) contre 32 en 2012 alors que la France en compte 27 (10 à Paris, 2 en Savoie et 1 dans l’Ain, l’Aude, l’Aveyron, les Bouches-du-Rhône, la Drôme, les Landes, la Loire, la Haute-Loire, la Marne, le Haut-Rhin, le Rhône, la Saône-et-Loire, la Haute-Savoie, le Var et Monaco).
Viennent ensuite les Etats-Unis avec 14 restaurants (dont 5 à New York et 4 à San Francisco, 3 dans d’autres villes de Californie (Los Gatos, St Helena et Yountville) et 2 à Chicago), l’Allemagne 11 (2 à Baiersbronn et 1 à Bergisch Gladbach, Dreis, Hambourg, Munich, Osnabrück, Perl, Rottach-Egern, Sarrebruck et Wolfsburg) et la Chine 10 (dont 6 à Hong Kong, 2 à Macao et 2 à Shanghai).
Sous la barre des 10, nous avons l’Italie 9 (1 à Alba, Brusaporto, Canneto sull’Oglio ; Castel di Sangro, Florence, Modène, Rome, Rubano et San Cassiano), l’Espagne 9 (dont 2 à Barcelone et à San Sebastian, et 1 à dénia, El Puerto de Santa Maria, Girona, Lasrte-Oria, Larrabetzu, Madrid et Sant Pol de Mar) et le Royaume-Uni 5 (3 à Londres et 2 à Bray).
Sous la barre des 5, nous avons la Suisse 3 (Bâle, Crissier et Fürstenau), la Belgique 2 (Kruishoutem et Zedelgem), la Corée du Sud 2 (les deux à Séoul), les Pays-Bas 2 (à Vaassen et à Zwolle), le Danemark 1 (à Copenhague), la Norvège 1 (Oslo) et Singapour 1.
